something new

This has been such a fun blog to have (my very first!), and I treasure each and every post I shared. In order to find time for an exciting new project, I've realized that I have to set this creation aside and make room in my life for the next big thing. I feel true affection for this site as I poured a lot of myself into it when posting, and it's been a rewarding way to interact with others and a loving venue for my own self-reflection. I'm a little sad, but I know from so much personal experience the importance of shifting things and welcoming change in order to move closer to where I'm needed.

With affection and gratitude, I'm kissing this child goodbye and sending it off into the wild world. It's a beautiful release, and the future is looking bright on the horizon.

fun with colors, juice version

I love cooking with colorful foods. Today I juiced with colorful produce!

Kale, carrots, cucumber, beet, lemon, orange, ginger...yum!





I added a lot of ginger (I like spice!), and my honey requested that his be cut with coconut milk so that it would be smoother.

I spooned in the coconut milk so I wouldn't go overboard. Who else feels like the drizzle looks like a Rorschach test?

three new things

  • I tried a recipe for vegan ricotta--my first time making vegan ricotta. Results? Super tasty and perfect for my casserole! I got the recipe here.
  • I used a new casserole dish that my mom gave me at my bridal shower. Beautiful and functional...thanks, mom! The casserole was something I threw together with ingredients we had in the house. I cooked a box of whole wheat penne then mixed it with the vegan ricotta and a box of frozen spinach that I had thawed on the stove while the noodles were cooking. I topped it with spicy marinara and baked in the oven at 250 degrees for about 15 minutes. Yum!


 
  • A new little sprout from a plant in my bedroom made its debut this week!

dusk run rewards

I took a jog at dusk and was rewarded with
  • a sunset that melted the sky into a canvas of purples, pinks, golds, and blues
  • several flocks of geese flying directly over my head in their V formation, so close to me I could hear their wings beating and feathers whistling in the wind
  • three white-tailed deer that emerged from the woods when the sky was getting dark and looked as if they were kneeling in prayer while they ate the frozen grass
